Mom's Apple Cake

I can not take credit for the scrumptious treat. Of course I found it on the web! I have made this a dozen times already and it is a great way to use up apples that are going soft. Also you can tweak it to make it more health friendly but my view on life is it is too short not to use real butter! Although the original recipe calls for oil not butter. Because this is an older recipe it uses all those good ingredients like oil, eggs, and sugar. Simple ingredients from a simpler time and I prefer my cooking that way. I have thought about substituting melted butter for the oil, which I am sure was the really first version of this, but I haven't done it yet... maybe next time and I will tell you how it comes out. I also prefer Organic Fruit when possible. Apples are one of the highest contaminated fruits on the market today - literally covered in pesticides, herbicides and fungicides that do not wash off. I also try to squeeze my Orange juice if possible - remember the closer to home it is made, the better it is for you!

6 Apples - I use what I have so this time it was organic Red Delicious
1 Tablespoon Cinnamon
5 Tablespoons Sugar
2 3/4 Cups All Purpose Flour
1 Tablespoon Baking Powder
1 Teaspoon Salt
1 Cup Oil (or butter, melted)
2 Cups Sugar
1/4 Cup Orange Juice
2 1/2 Teaspoons Vanilla
4 Eggs
1 Cup Walnuts, Chopped - optional my family doesn't care for nuts in cakes so I omit them

Step 1 - Preparing the Apples
Bite sized apple chunks
Before you do anything else, you need to get the apples peeled and cut into bite sized pieces (see picture to left). Once they are all cut and ready, add the Cinnamon and 5 Tablespoons of sugar to the bowl and stir gently until all the apple pieces are coated with the cinnamon sugar. Set this bowl aside. You will need to grease a Tube pan at this time as well as preheat your oven to 350 degrees F
Step 2 - Measuring Dry and Wet ingredients

In a medium sized bowl, measure out flour, baking powder and salt. Mix gently and set aside. In mixer, add orange juice, oil, sugar and vanilla and mix until blended. Add eggs to mixer and beat well. Once all wet ingredients are mixed, add the flour and beat well, scraping sides as needed.
Step 3 - Layering into the Tube Pan

Once your batter is mixed well, it is time to layer the apples and batter in your greased tube pan. First take 1/3 (I just eye ball it) of the batter and pour it into the tube pan. The batter will level itself out. Next add 1/2 of the Apples onto the top of the batter in the pan by sprinkling them evenly around.

Now add the remaining batter on top of the apple layer and allow to self level. You may see a few apples poking out but that is ok. Now sprinkle the remaining 1/2 of the apples on top and cake is ready to bake!
Step 4 - Baking

Bake in a 350 degree F oven for 1 1/2 hours or until a knife inserted in the center of the cake comes out clean. The cake should be golden brown in color. Allow to cool in pan for 10 minutes then remove insert from the tube pan. Allow cake to cool completely on a cooling rack. Slice and enjoy! This is a heavy cake so a small slice goes a long way!
