Blueberry Pie
What better use of blueberries then to make them into a tasty pie? Not just any pie either, one that when you bite into it, you bite into whole blueberries that burst in your mouth! It is an awesome combination and one that I have been making for years. I am not sure even where my Mom originally got the recipe from, but it has been more than 20 years that I have been using it.
Step 1 - Gather the ingredients

This recipe calls for a few simple ingredients...
Graham Cracker Crust (I cheated and used store bought but you can make your own)
3 Tablespoons Corn Starch
1 Cup Sugar
1/3 Cup Water
2/3 Cup Water
3 1/2 Cups Fresh Blueberries

Step 2 - Boil some Berries

You will need to take the 2/3 cup of water and put it into a sauce pan with 1 cup of blueberries. Allow this to come to a boil over medium heat. In the meantime, take the remaining water, 1/3 cup, and add the 3 tablespoons of cornstarch to it mixing it until it is dissolved. When the berries come to a boil you are going to add the 1 cup of sugar and the cornstarch mixture to the pan. Bring this mixture back up to a boil, stirring constantly as it will start to thicken and stick to bottom if not stirred. Once it is at a full boil, allow to boil for 1 minute. Then remove pan from heat and allow to cool for 10 minutes.
Step 3 - Add the remaining Berries

Once the mixture in pan has cooled for 10 minutes, it is time to add the remaining 2 1/2 cups of blueberries. Give it all a good stir until all the berries are covered in the syrup. Once that has been accomplished it is time to pour the blueberry mixture into the graham cracker crust. Spread the mixture evenly and then place in a refrigerator for at least a few hours to set and cool.
Once it has cooled and it is time to serve, I serve it with whipped topping or even vanilla ice cream! It is a quick and simple desert that guests will think you worked at for hours! It isn't runny at all as the cornstarch binds the syrup so it is just the right consistency. I usually can whip out one of these pies in under 15 minutes!
