Aunt Lizette's Coconut Oatmeal Cookies
One of my favorite cookies
This is one of my all time favorites cookies that I have been making for well over 25 years. This was a recipe given to me from my Great, Great Aunt Lizette who herself made these for many years. So where it originated from I don't know.. how old is it? I don't know that either.. but oh are they so easy to make and very yummy!

Ingredients needed
Old fashion recipes call for basic ingredients and these cookies are no different. Although the list is lengthy the ingredients are all from you cupboard and can be thrown together in minutes. I make these all the time when I am in the mood for cookies as you can add chocolate chips and it then they cover all the sweet tooth bases. I hope you enjoy them as much as we do.
Ingredients
2 Cups flour
1 Teaspoon Baking Powder
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 Cup Butter, softened
1 Cup Sugar
1 Cup Brown Sugar, firmly packed
2 Eggs
2 Teaspoons Vanilla
1 Cup Oatmeal
2 Cups Flaked Coconut
Optional
1/2 Cup Chocolate Chips
1/2 Cup Chopped nuts of your choice
I usually do 1 cup of chocolate chips and no nuts.

Step 1 - Making the batter
Creaming butter and sugar
You ready for how easy these are. In a medium size bowl measure the flour, baking soda, baking powder and salt. Give this a quick mix to blend everything. Put the sugar, brown sugar and butter into stand mixer and beat until light and fluffy. Add eggs and vanilla mixing well. Add the flour mixture to the sugar mixture and blend well. Now add the oatmeal and coconut and again mix well until blended. Add the chocolate chips and nuts if using allow to mix again and that is it!
Step 2 - Baking
Drop by teaspoon onto ungreased pan
Preheat oven to 375 degrees F. When the dough is well mixed drop by teaspoon sized balls onto an ungreased cookie sheets about 2 inches apart. Bake for 9-12 minutes or until golden brown around the edges. When done allow to sit a minute on pans before removing them to cooling racks to finish cooling off. Now it is time to make a cup a tea sit back and enjoy one or two of these!
