Lazy Lady's Quiche
This quiche has cheese, broccoli, and onions
What better way to use up some extra eggs and milk when you have a surplus then to make quiches. With the garden in full swing I had plenty of fresh vegetables to choose from. Add some left over ham to some and we have a complete meal in minutes! So simple and the best part is they freeze so incredibly well for up to 2 months!
Ingredients
Biscuit Mix I use that is homemade
For Crust:
1 1/4 cups Biscuit Mix (see recipe to make your own here)
1/4 cup butter
2 tablespoons boiling water
In a bowl using a pastry blender or fork, mix in the softened butter until small pea sized lumps develop. Add the boiling water and mix until soft dough forms. Take dough and place in a 9" or 10" pie plate and begin to spread dough out evenly using a patting motion. Work the dough gently but firmly up the sides and create a ridge at the top. Dough is very easy to work with and is very forgiving too - so don't worry if you make holes - just pat them closed and press to seal.
For Filling:
1 1/2 Cups milk or half and half
3 Eggs
1 Cup shredded cheese of your choice (I used the Mexican cheese combo or Cheddar)
1/2 teaspoon Salt (omit if you want to)
1/2 Cup Crumbled Cooked Bacon, Canadian Bacon, cubed ham, cooked sausage or any meat of your choice.
1/2 Cup vegetables such as onion, scallions, broccoli, spinach, tomatoes or any combination of them. I generally mix them up a bit so no two quiches are the same.
Salt and Pepper to taste
In a blender or bowl, mix the milk, eggs and salt until well blended. In the prepared pie crust, sprinkle the cheese, meat if using, and vegetable combination and spread evenly over the pie crust. Pour the egg mixture into the pie shell until egg just covers the meat/veg mixture or until the egg is just below the edge of the crust. Place the quiche in a pre-heated 400 degree oven and bake for 35 to 40 minutes or until a knife inserted in the center comes out clean. The edges will be brown and the center of the quiche will be firm and set. Remove quiche from oven and let stand a few minutes. Then slice and eat while hot or allow to cool and enjoy at room temperature! My girls love this so much they end up taking a wedge straight from the refrigerator and eating it cold. Hope you enjoy! How to reheat a frozen quiche
Wondering how to eat that quiche you froze? It is easy. Do not defrost it. You don't have to as this cooks up so fast you will really never know it was ever frozen. Preheat the oven to 350 degrees. Place the frozen quiche into the oven and allow it to cook for 25 minutes. The quiche will be hot and ready to serve that fast! Enjoy!
