Spicey Chicken Dip
A few years ago we were invited to a 50th Birthday for a dear friend, and someone brought this appetizer to share! Now I have to warn you it isn't the prettiest when made up but boy oh boy is it scrumptious! It is super easy to make and I believe has become very popular now and is advertised in some stores. Although in the original recipe it ingredients call for Blue cheese and Blue cheese dressing. My family (except Ben) does not like blue cheese, I know devastating news isn't it?. So I changed up the recipe from the original to make it Burrows Family Friendly :) You will need an 8x8 square pan to bake it in or if doubling then a 13x9 works great!
Ingredients: (single recipe)
1/2 cup Franks Red Hot Sauce (For hotter add more - for mild add less)
1/2 Cup Mayonnaise
1/2 cup Cheddar cheese
1 pkg Cream cheese softened
1 large cooked chicken breast or left overs = about 1 1/2 cups chopped
or 1 large can chunk white chicken breast

1/2 cup Cheddar cheese

1 large cooked chicken breast or left overs = about 1 1/2 cups chopped
or 1 large can chunk white chicken breast
First I soften the Cream cheese by either putting it in my pilot lit oven for an hour or so or for a quicker start, I put the unwrapped cheese on a microwave safe plate and microwave it for 30 seconds or so until the cheese is softened and can easily be mixed. If you are using left over chicken or a cooked breast I cut the meat up to small cubes less then 1/2" each. If using a can of chicken (12 oz) I open the can, drain the liquid and the chicken part is done. Put all the ingredients in the 8x8 pan and mix until well blended. Some lumps of cream cheese is fine as once the dip is baked it will soften more and you will stir it prior to serving. Bake in a 350 degree oven for 20 minutes or until the dip is hot and bubbly. Remove from oven and let it sit for a few minutes. Then give the dip a good stir and Serve hot with your favorite Corn chip, cracker or even better bagel chips. I didn't say this was healthy! That's it! Simple, easy and delicious! :)
Oh and don't throw those leftovers away! This dip is so good that we have been known to eat it on bagels for lunch or cold with leftover chips - Ben has also come up with the idea of making it into a pizza! We haven't tried this one yet, but I am sure it will be on the menu before he leaves for school! Enjoy!
