Biscuit Mix

The other day I made a marathon 8 quiches to use up some surplus milk and eggs we had. I usually make my own pie crust for my quiches but as time was short I decided to cheat a bit and use a lazy lady's recipe for crust that uses biscuit mix, butter and hot water. Well I had a box of bisquick that I used up in no time at all and I still had another 4 quiches to make. So I decided to find a recipe for home made biscuit mix that I could use to finish off the quiches but also to make another home made item to replace one I usually buy in the store. I have to warn you the recipe I found makes a very large batch of mix but this stores so nice in a plastic container or storage jars. It was so quick and simple to make and I know it ended up being a lot cheaper than the store bought brands. 10 Cups All purpose Flour
1/2 cup baking powder
2 tablespoons sugar
2 teaspoons salt
1 1/4 cups vegetable oil

Directions
- Combine flour, baking powder, sugar and salt in a mixing bowl. Add oil and mix with a fork or pastry blender; you should have small lumps throughout the mixture.
- Store in an airtight container in a cool, dry place for up to three months.
I only made half the recipe as my bowl wasn't big enough to put all the ingredients in plus mix it all up without creating a very large mess. Half of the recipe yields one 1/2 gallon sized canning jar so like a smaller box of mix from the store. Only took minutes to make and I even made more to use in the coming months. Happy Cooking!
